Texas Chili

TEXAS CHILI:

2 pounds ground beef (or meat of your choice, venison works well)
2 tablespoons vegetable oil
1 can Mexican beer
1/2 cup beef stock
7 tablespoons chili mix
1 tablespoon tomato paste
3 handfuls tortilla chips

In a large sauce pot or Dutch oven, brown ground beef  in vegetable oil over medium high heat. Add beer, beef stock, chili mix and tomato paste. Combine well. Crumble in 3 handfuls of tortilla chips. Reduce heat and simmer covered for 45-60 minutes until chili is thickened and tortilla chips have dissolved.
